First edition of the first Chinese cookbook in France. Lecourt, a native Chinese speaker, was postmaster of the French concession in T'ien-Tsin. He married a Chinese woman who introduced him to cooking and helped him to write this book, which is scattered with Chinese ideograms and presents in various chapters grilled and fried, steamed, smoked, boiled, marinated, sauces, sweets, etc. recipes. Recipes include: steamed shark's fin, fricasseed frogs, steamed turtle, cinnamon blossom compote, swallow's nest soup... Illustrated with 3 full pp. and qqs in-text.
