Sought-after first edition, published in late 1872 (but dated 1873). This treatise, a complement to the Livre de Cuisine, is divided into two parts: the preparations and the large pieces and detached entremets. In the preliminary considerations, the author addresses young pastry chefs (terms, the oven, cooking).
It is illustrated with a portrait of the author, officer of the Jokey-Club of Paris, 137 woodcuts in the text and 10 chromolithographs out of text (croustades, cakes, timbales, pieces mounted...), after paintings and drawings of E. Ronjat.
Some foxing. Slight rubbing to the spine, one plate detached.
