First edition of this dictionary, whose recipes are based on those of Beauvilliers, Archambaut, Fouret, Viard, Carême, Thomas, Lebeau, Machet... It is enriched with modern discoveries and also contains a "notice on wines, according to Julien's procedures".
It was published, under the pseudonym Borel, by the writer Charles Cousin d'Avallon (1769- 1840); under the pseudonym A. T. Raimbault, he also published Le Parfait Cuisinier (1810) and numerous works (Gastronomiana, 1809; La Nouvelle cuisinière bourgeoise, 1816; Le Cuisinier moderne, 1836). This man of mouth died without fortune and of hunger.
