The text is divided into three parts: the part on coffee is due to a learned physician of the Empire who did not want to be named, the one on tea is taken from the relations and observations of Mgr Beryte, Father Alexandre de Rodez and Nicolas Tulpius, and the last one on chocolate is René Moreau's translation of Antonio Colmenero de Ledesma's speech.
