Tableware: The Essential Ice Bucket

At a time when artificial cold did not exist, the cooler was an essential accessory with any table service.

An ice bucket or champagne bucket is mentioned in the "Green Ribbon" service Louis XV gave to Empress Maria Theresa in December 1758. In all the ceremonial services subsequently produced by the Sèvres Manufacture, there was at least one pair of them, meaning that the object had become an integral part of any service worth its salt. According to an unchanging code dictated by its function, it consisted of three parts: a container, a liner and a high-rimmed lid. When the dessert came out of the ice cream-maker, it was poured into the inner bowl held between two beds of ice. For the record, natural ice was collected in winter and stored in small hermetically sealed wells. Then guests could relish ice creams, sorbets and "snow ices" to their heart's content.
