CUISINIER GASCON (The). Amsterdam, (Paris), 1747. In-12, bradel green paper boards of the 19th century, untrimmed.
(4) ff., 244 pp.
Second edition of this cooking treatise, containing more than 200 original recipes with eccentric names ("les yeux de veau farcis au gratin, les Œufs au soleil, les Poulets vilains ou à la motte"...).
According to Simon, the work can be attributed to the dedicatee himself, Louis-Auguste de Bourbon, prince of Dombes, grandson of Louis XIV and Madame de Montespan, a gastronome who liked to participate in the Petits Soupers of Louis XV.
The first edition appeared in Amsterdam (Paris), in 1740. This new edition is enriched by the Letter of the English Pastry Chef, by the son of the French ambassador in Constantinople, M. Desalleurs (published in 1740), which is a criticism of the preface of the Dons de Comus de Marin and of the preciosity of the new learned cuisine.
Cachet Au préalable de Soissons. Yellowed leaves. Binding rubbed, soiled.
Vicaire, 234. - Simon, 421.
