The first edition of this anonymous work, reprinted several times until the 19th century, appeared in 1760.
It was written by the lawyer Alletz (1703-1785), author of L'Albert moderne. "It is one of the best manuals of the time on country life" (Oberlé). In addition to the numerous advices on cultivation, vineyard, hunting, fishing and breeding, the encyclopedia presents "various food preparations, & everything that can provide a healthy and pleasant food"; let us note the recipes for cooking ray, chicken, salting pork, compotes, etc...
